When I say Espresso Infused Salt… what do you think of?

I asked myself that question when I saw Espresso Infused Sea Salt at this beautiful tea and spice shop in Stillwater Minnesota. We went to pick up some organic loose leaf tea and I HAD to purchase the salt too. It’s called Spice and Tea Co. and they are quite amazing. I got to meet the owner of this shop and she let me try roasted garlic and gave me a sample bag of her toasted amaranth she just recently bought home from Guatemala. (Which I am still thinking of how to use that in a recipe). Overall it was a wonderful shopping experience and I got a recipe idea from being there.

So to answer my above question…I thought… how about Espresso Cupcakes topped with the Espresso Infused Sea Salt? That shopping trip birthed this deliciously decadent recipe.

The Dangers of a Microwave and How to Live Without One

I have been microwave free for 8 years. It’s hard to believe it has been that long. And guess what? I can honestly say I don’t miss it for a second.

In this article I want to first of all tell you the dangers of microwaves. But I also want to give you some very valuable tips on how to live without one. I want to help you make the transition smooth and as easy as can be. Once you go without a microwave you will find out how easy it really is. Some people tell me they could never live without a microwave, but all I say is go cold turkey for 1-2 weeks and you will quickly realize that you really can do it!

Chocolate Ganache Pie

This recipe came out of a failed attempt to make a completely different recipe. I was trying to make a coconut cookie sandwich filled with chocolate ganache. The coconut cookies tasted like cardboard (or what I’d imagine it to taste like). They sounded so good in my head but definitely didn’t turn out. Then I prepared a chocolate ganache that was different than the ones I’ve made in the past. I must have calculated wrong, or way wrong, because I had cups and cups of chocolate ganache. Way more than I would have ever needed to fill the cookies. So there I was; a saucepan full of chocolate and un-edible cookies. I was determined to scrap something from this failed blog attempt. And then it hit me… pie! I created a buttered coconut crust, added gelatin to the ganache (so the pie sets up) and it was rich, creamy and wonderful! Phil and I ate the whole thing in a week. We didn’t share it with anyone, which I almost always do with my treats. Now my failed cookie attempt can be your next delicious dessert!

Checklist to Begin Living Healthier

Trust me, I don’t know everything and I surely don’t have everything figured out, but I have been doing this for almost 10 years. So much of my information has come from years and years of learning. Stuffed Peppers with Capers and Olives

I love meals that you can stuff full of vitamins, nutrients and good flavor all in one dish. It is easy to prepare and has your protein, fats and vegetables in one dish. This recipe of stuffed peppers has a Mediterranean vibe because of the capers and green olives. These peppers has many depths of flavors in it from the salty and tangy capers and olives and all of the spices in the italian seasoned turkey.

Thai Turkey Burgers

How about a crazy, mixed up, yummy turkey burger? This turkey burger has classic Thai tastes; ginger, cilantro, coriander and turmeric.

Turmeric is one of the most amazing and healing spices. It works as an anti-inflammatory and an analgesic. It is also good for immune system function, digestive system, joint health and is a very powerful antioxidant. Turmeric is hands down amazing. How about creating not only a tasty burger, but a burger that throws a huge health punch?

You can serve it on a bed of spinach, or a side of roasted asparagus or coleslaw.

About the Gut

I am sitting in a seminar as I type this. The seminar is two whole days of learning all about the gut. We are learning (or re-learning) the science of the GI tract, our microbiome, and how to heal a leaky gut. This is being published a couple weeks later, but these gut-healing protocols are still circling in my brain. It was an wonderful seminar. It’s amazing how looking to the gut can heal and help many symptoms so many people face. 

Leaky gut, so we are all on the same page, is too much permeability in the gut. The gut cells are lined up and are connected by tight junctions. Those junctions are supposed to be tight, close together. When the gut is off (and there are many reasons for that) those tight junctions open up too wide or break apart and you let big particles through into the blood stream. That is a leaky gut. It’s estimated that about 85-90% of people have some level of leaky gut. So, let’s face it, we all can use some gut healing! 

Here is what I learned in Utah over the course of two days:
1. Our bodies have about 10 trillion cells. Our microbiome is made up of 100 trillion cells and weighs about 4 pounds. Each person has a unique microbiome, much like the uniqueness of our fingerprints. Our microbiome is powerful to the health of our bodies!

2. Your gut flora digests protein, fats and starches. It also synthesizes our vitamins and minerals. If your gut flora is unhealthy or unbalanced, you aren’t absorbing all of the nutrients you should be. You could be well fed, but undernourished.  

3. As we speak, convention medicine and the pharmaceutical companies are working on drugs to try and solve leaky gut. The drugs are definitely NOT the answer. Drugs can’t solve the problem, but some deep gut work will help. What this shows is that leaky gut is too big of a problem for our medical system to ignore. 

4. When you have a gut on fire you have a brain on fire. You can’t separate the two, they are connected! If you have a leaky gut, you have a leaky brain. Not all leaky gut people have gut symptoms though. Think about your brain. We don’t have the time in our days to have brain fog, lack of focus, fatigue, and mood imbalances. Do you have brain symptoms?

5. Everything you eat or take into your body has to go through your microbiome. It can be used for good or be used for harm. Pay attention to what you are putting on your body from day to day. It really matters!

6. Our guts can determine the health of not just your brain. But also your thyroid and your liver. Your gut also tells your body to lose weight and build muscle. Have you been trying to lose weight and can’t? Maybe it’s your gut?

Taco Bake

This Taco Bake is one of my new favorite go-to recipes. It tastes great, as we all know is a must, and has a pretty mild taco flavor. It has no grains and is jam packed with veggies. The vegetables in this dish are shredded on a cheese grater and sautéed in with the onions and beef. It is topped with fresh tomatoes and cheese and baked until the cheese is melted and it is heated throughout. This is a great way to get your fill of vegetables! 

In the past I have never been a big fan of hot sauce. But it is really good in this recipe! You just throw some hot sauce on top and it gives it a new depth of flavor. If you have kids, just omit the hot sauce and this recipe is mild enough for almost any pallet.

Green Apple Bundt Cake with Carmel Frosting


So this past weekend I was in charge of a dessert for my dear friends birthday. She is also grain and refined sugar free, so I needed to create a dessert using her favorite flavors. She requested pumpkin or apple. Now last fall I made quite a few pumpkin dishes, so I wanted to venture into an apple flavor. I created a green apple bundt cake. Bundt cakes don’t scream birthday cake, but it was fun and easy to make. I also created a carmel frosting. Well, I guess you can’t actually call it carmel, but it’s a burnt butter frosting with coconut butter and coconut milk. So it tasted very carmel-like. I had some extra frosting I brought in a mason jar and everyone wanted to add even more frosting to their cake, so the extra didn’t last long.

This recipe contains honey, so if you aren’t doing honey (or any non- refined sugars), just substitute the amount of honey listed for xylitol. It will work similarly and add sweetness without any added blood sugar effect. I also used green apples in this recipe because green apples have a lower glycemic impact than red apples. But you can really substitute any apples into the recipe.

As you can tell by my picture, it was taken while in the travel container I brought to the party. It’s not the prettiest presentation, but you get the right idea!
